And let’s be real, when you need vermouth, you typically need it last minute because you need it for a recipe you’re cooking or a craving.
So I want to share my tried and true Quick Vermouth, that gives you vermouth vibes if that’s what you’re looking for. For a white use your favorite non-alcoholic white wine. For a Rosso, use a rosé. It doesn’t matter if it’s sparkling or not - the bubbles will be less present when you dilute with the other ingredients.

Replace malic acid with 1/8 teaspoon apple cider vinegar or lemon juice
Replace Fennel and Eucalyptus tea with 2 bags of Earl Grey tea
Directions
Put the 3/4 cup water and tea bags into a sauce pan. Bring to a rolling boil, cover, and then reduce to simmer. Simmer for 3 minutes. Turn off the heat and cool completely. You should be left with about 1/2 a cup of strong tea.
Add half the completely cooled tea to a mason jar. Add the rest of the ingredients except for the simple syrup and stir.
If it’s not sweet enough, you can add the simple syrup now. If it doesn’t have enough licorice flavor, add more of the tea, a couple teaspoons at a time.
Chill in the refrigerator until you’re ready to start mixing drinks or drink over ice on its own with a sprig of Tarragon or Thyme.
